We finished our olive oil harvest on June 18th and are looking forward to launching our 2015 Olio Nuovo in the next few weeks. An Italian concept, Olio Nuovo literally means ‘new oil’ and is the freshest oil, direct from the press.
While most extra virgin olive oil is left to settle for 30 to 90 days before bottling, Olio Nuovo goes from tree to press in a matter of hours and is bottled with minimal delay. Our Olio Nuovo is made from organic and biodynamically farmed fruit and is wonderfully pungent, peppery and a vibrant green. Use it as a simple dressing with parmesan on fresh pasta, as a pungent dip for crudités or drizzled on a winter soup.
