The 2023 Beautiful Chaos Natural white embodies a minimalist, mindful way of winemaking. This playful biodynamic blend of Pinot Gris and Riesling has been handpicked and fermented naturally on skins in clay amphorae and small stainless tank for 21-26 days. After ferment, the components were basket pressed to neutral oak. The wine remained in barrels on lees for three months undergoing malolactic fermentation naturally. The result is incredibly mouthwatering and delicious, our Beautiful Chaos white is the perfect marriage of ripe citrus fruits and ginger spice. Time fermenting on skins has brought to the fore a wonderful phenolic structure that finishes dry. Bottled unfined and unfiltered.
