Beautiful Chaos Syrah
— Case of 6 Bottles —
Backing up very nicely an excellent ’24 vintage, the ’25 version manages to retain the concentration but also shows a depth of grace and elegance. Lifted bouquet of plum and berry fruits, combined with spice and black pepper. The palate is charming, with vibrant fruit that is supported by powdery, polished tannins, and a backbone of acidity that gives great length. A true expression of Syrah from our special, cool climate vineyard.
The Syrah was hand-picked in April, the last pick of our harvest. The fruit fermented naturally and was very gently plunged twice a day. After spending 28 days on skins, the wine was gently pressed off skins to rest for five months back in amphorae and neutral barriques, where it completed malolactic fermentation naturally. Prior to bottling, the wine was racked gently out of amphorae and barriques to blend and clarify naturally, in a stainless steel vessel. It was bottled without any stabilisation, fining, filtration or added sulphur.
