Extra Virgin Olive Oil
We originally imported olive trees from a specialist olive nursery in Tuscany owned by Attilio Sonnoli. Our ambition was to cultivate the classic varieties that make Tuscan extra virgin olive oil probably the best in the world. Frantoio, Leccino, Maurino, Minerva and Pendolino olive trees are biodynamically grown on our Raupo Creek Estate. The soils are of varied Waimakiriri type, of alluvial origin with free-draining basalt pebbles.
The olives were cold-pressed on the day of harvest. The oil is characterised by crisp ripe apple flavours on the nose. The excellent autumn ripening conditions encountered in Marlborough, have created a complex flavour profile from fruity through to grassy and herbal on the palate, with a pleasant peppery finish.
